These ultimate fudgy high protein brownies are rich, moist, and deeply chocolatey with a perfect crinkle top. Made with a triple-fudge effect from bloomed cocoa, Greek yogurt, and applesauce, they’re high in protein, easy to make, and perfect for dessert or post-workout snacks.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup hot water or brewed coffee
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup full-fat Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1/2 cup all-purpose flour
  • 1/2 cup whey protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Whisk melted butter, cocoa powder, and hot water/coffee until smooth (bloom cocoa).
  3. In a large bowl, whisk eggs, sugar, and vanilla until light and fluffy.
  4. Mix in cocoa mixture until just combined.
  5. In a separate bowl, whisk flour, protein powder, baking powder, and salt.
  6. Add dry ingredients to wet ingredients in batches and mix until just combined.
  7. Fold in chocolate chips.
  8. Pour into pan and spread evenly.
  9. Bake 20–25 minutes until moist crumbs appear on a toothpick.
  10. Cool completely before slicing.
