24 oz salsa
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large yellow onion, thinly sliced
6 garlic cloves, minced
2 lb chicken breast, sliced into 1-inch strips
1 packet fajita seasoning
2 tbsp lime juice
1 tsp chili powder
Instructions
Slice chicken and vegetables, mince garlic. Prepare all ingredients before layering.
Pour half of the salsa into the crockpot. Layer half of the peppers, half the onion, and all garlic on top.
Place chicken over vegetables. Sprinkle fajita seasoning and chili powder, rub slightly into chicken.
Layer remaining salsa and remaining peppers and onions. Squeeze lime juice over everything. Stir gently once.
Cover and cook on low 6–8 hours or high 3–4 hours until chicken reaches 165°F.
Shred chicken directly in crockpot with two forks. Set crockpot to warm to serve.
