1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla
1/2 cup all-purpose flour (or gluten-free/almond flour)
1/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp sea salt
1 cup diced rhubarb
1/2 cup dark chocolate chips
1/2 cup chopped walnuts or pecans
Instructions
Preheat oven to 375°F and line an 8×8 inch pan with parchment paper, buttering top lightly.
Whisk sugar, vegetable oil, eggs, and vanilla in a medium bowl.
In a separate bowl, whisk flour, cocoa powder, baking powder, and salt.
Stir wet ingredients into dry until just combined. Fold in rhubarb, chocolate chips, and nuts.
Pour batter into pan evenly and bake 20–25 minutes, or until a toothpick comes out clean. Cool 10 minutes, then cut into 9 squares.

If using frozen rhubarb, thaw and dry before baking; may require 10–15 extra minutes.
