Watermelon Tajín Pickle Crunch Cups are a refreshing sweet-spicy snack made with juicy watermelon, tangy pickles, fresh vegetables, and crunchy toppings, perfect for summer gatherings.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup dill pickles, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely diced
  • 1 jalapeño, sliced or diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup cotija or feta cheese (optional)
  • 1/2 cup tortilla strips or crushed spicy chips
  • 3 tbsp lime juice
  • 2 tbsp pickle juice
  • 1 tbsp honey or hot honey
  • 1 tbsp olive oil
  • 1 tsp Tajín seasoning
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • Pinch of salt (optional)
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp hot sauce (optional)

Instructions

  1. Cut watermelon into cubes and pat dry.
  2. Combine watermelon, pickles, cucumber, onion, jalapeño, and cilantro.
  3. Whisk lime juice, pickle juice, honey, olive oil, Tajín, and spices.
  4. Toss gently with mixture.
  5. Chill 10–15 minutes.
  6. Spoon into cups or bowls.
  7. Top with cheese and crunchy chips just before serving.

Notes

  • Best served cold and fresh.
  • Add crunchy toppings right before serving to keep texture.
  • Do not over-chill or watermelon will release too much juice.
