Unstuffed Cabbage Roll Soup is a hearty, comforting dish made with lean ground beef, tender cabbage, rice, and a rich tomato-based broth. It captures all the classic flavors of traditional cabbage rolls in an easy one-pot meal perfect for busy nights, meal prep, or freezing for later.

Ingredients

  • 2 tsp vegetable oil
  • 1 lb lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground beef, season with salt and pepper, and cook until browned.
  3. Add onion and garlic; cook until softened.
  4. Stir in cabbage, carrots, tomato sauce, beef broth, rice, bay leaf, and brown sugar.
  5. Bring to a simmer and cook for about 25 minutes, until rice is tender.
  6. Remove bay leaf, garnish with parsley, and serve hot.

Notes

  • This soup freezes very well in portioned containers.
  • Lean beef reduces grease, but regular beef can be used if preferred.
