Ingredients

Scale
  • 3 cans cannellini beans, drained and rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 1 celery stalk, diced
  • ⅓ cup white wine
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • ¼ tsp Italian seasoning
  • 2 bay leaves
  • 1 tsp thyme
  • ½ tsp oregano

Instructions

  1. Sauté onion in olive oil until lightly browned.
  2. Add garlic, celery, and carrots; cook until softened.
  3. Add white wine and reduce until mostly evaporated.
  4. Add remaining ingredients except kale and simmer for 15 minutes.
  5. Remove bay leaves, blend part of the soup, and return to pot.
  6. Adjust thickness with broth if needed.
  7. Add kale and simmer until wilted. Adjust seasoning and serve.

Notes

  • Use less broth for thicker soup, more for thinner consistency.
  • White wine enhances flavor but can be omitted.
  • Add lemon juice for brightness before serving.
