A copycat of the fast-food favorite, this Taco Bell Beefy Melt Burrito is stuffed with seasoned beef, beans and rice, Fritos, and more!

Ingredients

  • 1 pound lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1/4 cup water or beef broth
  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice or instant Mexican rice
  • 4 burrito-sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip, warmed (like Tostitos)
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • Salsa, if desired

Instructions

  1. Cook beef in a sauté pan, breaking apart as it cooks until no longer pink. Add taco seasoning and water; cook 1 more minute. Stir in refried beans.
  2. Prepare rice and heat tortillas in microwave 30 seconds.
  3. Assemble burritos: layer meat mixture, rice, Fritos, cheese dip, shredded cheese, sour cream on tortillas. Fold sides and roll into burritos. Repeat.
  4. Serve as-is or toast in a pan over medium heat. Serve with salsa if desired.

Notes

  • Store in airtight container in fridge up to 5 days; freeze individually for up to 3 months (omit Fritos for freezing).
  • Assemble last-minute for crispy Fritos; toast in skillet if desired.
