Strawberry Spinach Salad with Candied Pecans is a fresh, sweet, and savory salad made with spinach, strawberries, goat cheese, and crunchy caramelized pecans tossed in balsamic vinaigrette.

Ingredients

  • 2 tbsp butter
  • 1 cup pecans
  • 2 tbsp brown sugar
  • 6 oz spinach leaves
  • 1 1/2 cups strawberries
  • 1/4 cup goat cheese or feta
  • balsamic vinaigrette dressing

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add pecans and brown sugar, stirring until coated.
  3. Cook until sugar caramelizes, about 3 minutes.
  4. Spread on wax paper to cool.
  5. Layer spinach, strawberries, cheese, and pecans in a bowl.
  6. Add dressing just before serving and toss gently.

Notes

  • Do not add dressing until serving to keep salad fresh.
  • Feta cheese can replace goat cheese if desired.
