Comforting and customizable, these Sticky Chicken Bowls feature tender chicken coated in a rich sticky glaze, paired with bright broccoli and fluffy rice, then finished with a creamy spicy mayo drizzle for a satisfying weeknight meal.

Ingredients

  • Sticky Chicken:
  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • Sticky Sauce:
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder + 2 tbsp water
  • Spicy Mayo:
  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 23 tbsp water
  • Bowls:
  • 2 cups uncooked rice
  • 2 small heads broccoli, chopped
  • Sesame seeds for topping

Instructions

  1. Cook rice according to package instructions.
  2. Prepare and chop broccoli.
  3. Season chicken with salt, pepper, paprika, chili powder, onion powder, and oregano.
  4. Cook chicken in skillet until golden and fully cooked.
  5. Cook broccoli until tender.
  6. Mix sauce ingredients, add to chicken, and simmer until thickened.
  7. Mix spicy mayo ingredients until smooth.
  8. Assemble bowls with rice, chicken, broccoli, sauces, and sesame seeds.

Notes

  • Sauce can be made ahead and stored up to 3 days.
  • Add hot water if sauce thickens too much.
  • Rice can be swapped for quinoa or cauliflower rice.
