Juicy baked chicken breasts topped with creamy spinach artichoke dip and melted mozzarella for an easy weeknight chicken dinner.

  • 15 ounce can artichoke hearts, drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 cup chopped fresh spinach, packed
  • 2 pounds boneless, skinless chicken breasts (34 breasts, lightly pounded to even thickness)
  • 1 cup freshly grated Mozzarella cheese

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. In a medium bowl, combine artichokes, spinach, Parmesan, mayonnaise, and garlic powder.
  3. Place chicken in baking dish and spread artichoke mixture on top. Sprinkle with mozzarella.
  4. Cover with foil and bake 20-30 minutes, checking that internal temp reaches 155°F. Uncover and broil 5-10 minutes until cheese is browned and chicken is cooked through. Let sit 5 minutes before serving.

Notes

  • Use fresh Mozzarella for best melt.
  • Spinach is optional.
