  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper
  • 4 large flour tortillas
  • 1 cup romaine lettuce
  • 1/2 cup corn
  • 1/2 cup black beans
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion
  • 1/2 avocado
  • 1/4 cup cilantro
  • 1/4 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp chipotle powder

Instructions

  1. Mix spices and coat chicken evenly.
  2. Cook chicken in skillet 5–7 minutes until 165°F internal temp.
  3. Whisk sauce ingredients until smooth.
  4. Warm tortillas until pliable.
  5. Layer sauce, chicken, veggies, and toppings onto tortillas.
  6. Wrap tightly, slice, and serve or store.

Notes

  • For meal prep, add avocado and tomatoes fresh later.
  • Store wrapped for up to 3 days.
