A delightful slow-cooked dish featuring tender chicken breasts simmered in a tropical pineapple sauce, perfect for dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (20 oz) pineapple chunks in juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Place chicken in slow cooker.
  2. Mix pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over chicken.
  3. Add peppers and onion. Season lightly.
  4. Cook on low 6–7 hours or high 3–4 hours.
  5. Shred chicken and mix back into sauce.
  6. Serve over rice.

  • Adjust sweetness by changing brown sugar amount.
