- 1 cup baby carrots, sliced
- 1½ cups asparagus, trimmed & cut into 1-inch pieces
- 1 red bell pepper, sliced then cut into 1-inch pieces
- 2 small zucchini, chopped into half moons
- 1 small yellow squash, sliced then cut into 1-inch pieces
- 5 to 6 green onions, chopped
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ tablespoon Italian seasonings
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add carrots, asparagus, and red bell pepper; cook 6–8 minutes, stirring often.
- Add zucchini, yellow squash, and green onions; cook 5 minutes, stirring often.
- Add mushrooms, garlic, butter, salt, pepper, and Italian seasoning; cook 5–7 minutes.
- Serve immediately.
