A rich and creamy stuffed chicken inspired by Ruth’s Chris, filled with spinach, cheeses, and garlic, then seared and baked until golden and juicy.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Cut a pocket into each chicken breast and stuff with mixture.
  4. Sear chicken in olive oil over medium heat for 3–4 minutes per side until golden.
  5. Transfer to baking dish and bake 20–25 minutes until fully cooked.
  6. Rest for a few minutes before slicing and serving.
