Ranch Garlic Parmesan Chicken Skewers are tender, juicy chicken cubes marinated in creamy ranch dressing with garlic and Parmesan, grilled to smoky perfection, and perfect for BBQs, weeknight dinners, or appetizers.

  • ½ cup ranch dressing (store-bought or homemade)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried parsley (or fresh, chopped)
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tsp lemon juice (optional)
  • lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers

Instructions

  1. Combine ranch, Parmesan, olive oil, garlic, parsley, black pepper, garlic powder, and lemon juice in a bowl.
  2. Place chicken in a resealable bag or dish, pour marinade over, coat thoroughly, and refrigerate 30 min to 2 hrs.
  3. Thread chicken onto skewers, leaving space between pieces. Soak wooden skewers in water 15 min if using.
  4. Preheat grill to medium-high. Grill skewers 10-15 min, turning occasionally, until internal temp reaches 165°F (75°C).
  5. Remove from grill, let rest a few minutes, then garnish with parsley or extra Parmesan. Serve with sides or dipping sauces.

Notes

  • For juicier skewers, use chicken thighs.
  • Marinate overnight for deeper flavor.
