8 oz (225g) noodles (spaghetti, rice noodles, or lo mein)
2 cups cooked shredded chicken
1/2 cup creamy peanut butter
1/4 cup soy sauce or tamari
2 tablespoons honey or brown sugar
2 tablespoons lime juice or rice vinegar
1 tablespoon sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4–1/2 cup warm water (to thin sauce)
Optional toppings: chopped peanuts, green onions, cilantro, chili flakes or chili oil
Instructions
Cook noodles according to package instructions. Drain and set aside.
Whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, garlic, and ginger.
Add warm water gradually until sauce is smooth and pourable.
Heat shredded chicken until warm.
Toss noodles with peanut sauce until fully coated.
Add chicken and mix well.
Adjust seasoning with soy sauce, lime juice, or spice.
Serve immediately with toppings.
Notes
Add more warm water if sauce thickens too much.
Rotisserie chicken works great for faster prep.
