Easy Peach Cobbler Pudding made with layers of creamy vanilla custard, spiced peaches, crushed biscuits, and whipped cream.

  • For the Pudding
  • 4 egg yolks
  • 4.25 oz sugar
  • 3.5 tbsp cornstarch
  • 3.5 cups milk
  • 3 tsp vanilla
  • 1/4 tsp fine sea salt
  • For the Peach Layer
  • 2.2 lb peaches, sliced
  • 3.5 oz brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp lemon juice
  • For Assembly
  • 2.5 cups cream, whipped
  • 1.5 tbsp icing sugar
  • 8.8 oz biscuits, crushed

Instructions

  1. Cook peaches with brown sugar, cinnamon, nutmeg, and lemon juice until soft and syrupy. Cool completely.
  2. Whisk egg yolks and sugar, then add cornstarch-milk mixture. Cook until thickened, then add vanilla and salt. Chill for 2–3 hours.
  3. Whip cream with icing sugar until stiff peaks form. Crush biscuits into chunks.
  4. Layer biscuits, custard, and peaches in a dish. Repeat layers and top with whipped cream.
  5. Refrigerate at least 1 hour before serving chilled.

Notes

  • Best texture comes from fully chilled custard before layering.
  • Use fresh ripe peaches when possible.
  • Can be made a day ahead for better flavor.
