Delicious Peach Cobbler Muffins with a sweet streusel topping, perfect for breakfast or dessert.

  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/4 cup salted butter (melted and cooled)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 tablespoons peach juice
  • 2 cans peaches in juice (15-ounce)
  • 1/4 cup salted butter (cold, cubed)
  • 1/3 cup flour (for streusel)
  • 1/3 cup sugar (for streusel)

Instructions

  1. Preheat oven to 425°F and prepare muffin pan.
  2. Mix flour, salt, and baking powder.
  3. Whisk eggs, melted butter, sugar, vanilla, milk, and peach juice.
  4. Combine wet and dry ingredients gently.
  5. Drain and dice peaches; toss with flour.
  6. Fold peaches into batter.
  7. Fill muffin cups 3/4 full.
  8. Top with extra peaches and streusel topping.
  9. Bake 6 minutes at 425°F, then 15–18 minutes at 350°F.
  10. Cool before serving.

Notes

  • Do not overmix batter.
  • Coat peaches in flour to prevent sinking.
