4 salmon fillets (150–180g each)
2 medium zucchini, spiralized
4 cloves garlic, minced
3 tablespoons unsalted butter
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley (optional)
2 tablespoons grated parmesan cheese (optional)
Instructions
Pat salmon dry and season with salt and pepper.
Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
Sear salmon skin-side down for 4–5 minutes, then flip and cook 2–3 minutes more. Remove and set aside.
In the same pan, melt remaining butter and sauté garlic for 1 minute.
Add zucchini noodles and cook for 2–3 minutes until just tender.
Stir in lemon juice, zest, and red pepper flakes.
Return salmon to the pan and spoon sauce over top.
Heat together for 1–2 minutes.
Garnish with parsley and parmesan if desired, then serve.
Notes
Do not overcook zucchini noodles to avoid excess water.
Fresh salmon gives best texture, but thawed frozen salmon also works.
Add spinach or cherry tomatoes for extra vegetables.
Use olive oil instead of butter for a dairy-free version.
