Nacho Doritos Taco Salad is a crunchy, flavorful salad loaded with seasoned beef, fresh vegetables, beans, cheese, and Doritos, tossed in a tangy dressing.

  • For the beef
  • 1.25 lbs ground beef
  • 3 tbsp taco seasoning
  • 1/2 cup water
  • For the salad
  • 1 head iceberg lettuce, chopped
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1/2 cup black olives, sliced
  • 15 oz pinto beans, rinsed
  • 1.5 cups roma tomatoes, diced
  • 1/3 cup scallions, sliced
  • 1 1/2 cups cheddar cheese, grated
  • 10 oz Nacho Cheese Doritos, crushed
  • 12 oz Catalina dressing
  • 1/4 cup cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 cup sour cream

Instructions

  1. Prepare vegetables: chop lettuce, dice peppers, slice olives, drain beans, dice tomatoes, slice scallions, grate cheese, and chop cilantro.
  2. Cook ground beef until browned, drain fat.
  3. Add taco seasoning and water, simmer 5 minutes, then cool slightly.
  4. Combine vegetables, beans, cheese, and scallions in a large bowl.
  5. Add dressing and lime juice, toss well.
  6. Add beef and mix gently.
  7. Fold in crushed Doritos just before serving.
  8. Top with sour cream, cilantro, and remaining scallions.

Notes

  • Add Doritos last to keep them crispy.
  • Let beef cool slightly before mixing.
  • Serve immediately for best texture.
