Creamy, crunchy Mexican Street Corn Dip is full of flavor and is perfect for backyard barbecues and summer get-togethers.

  • 1/4 cup mayo
  • 4 ounces cream cheese, softened
  • 1/4 teaspoon cayenne pepper
  • 4 ounces cotija cheese, crumbled
  • 1/2 cup chopped cilantro (plus more for garnish)
  • Lime wedges for garnish (optional)

Instructions

  1. Preheat grill to medium-high heat. Roast corn until slightly charred, then cool.
  2. Cut kernels from cobs and set aside.
  3. In a medium bowl, whisk cream cheese and mayo until smooth.
  4. Stir in cayenne pepper and cotija cheese.
  5. Fold in corn kernels and chopped cilantro.
  6. Transfer to a serving bowl and chill up to 1 day. Garnish with extra cilantro and lime wedges.

Notes

  • If no grill is available, cook 3 cups corn kernels in a dry pan over medium-high heat until darkened, stirring occasionally.
