Ingredients

1.5 pounds chicken breast
3 cups fresh spinach
1.5 cups cherry tomatoes
1 large red bell pepper
1 medium yellow squash
4 cloves garlic
3 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Zest of 1 lemon
Salt, to taste
Black pepper, to taste
Instructions
Pat chicken dry and season with salt, pepper, and half the oregano.
Heat 2 tbsp olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until browned and cooked through. Remove and set aside.
Add remaining olive oil and sauté garlic for 30 seconds.
Add bell pepper and squash and cook 4–5 minutes until softened.
Add cherry tomatoes and cook 2 minutes.
Return chicken to skillet and add spinach, remaining oregano, and red pepper flakes.
Cook 2–3 minutes until spinach wilts and everything is combined.
Finish with lemon zest, adjust seasoning, and serve hot.
