Ingredients

  • 1/3 cup red onion, finely chopped

  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Slice tomatoes into 1/3-inch thick slices and arrange in a shallow dish.
  2. Whisk olive oil, vinegar, onion, garlic, herbs, salt, and pepper in a bowl.
  3. Pour marinade evenly over tomatoes.
  4. Cover and refrigerate for at least 2 hours, flipping once during marination.
  5. Serve chilled as a salad or side dish.
