A delicious and vibrant dish featuring spicy jerk chicken served over a refreshing mango slaw, topped with a creamy honey lime dressing.

Ingredients

  • 4 chicken thighs, boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 2 cups cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Rub chicken with jerk seasoning and olive oil.
  3. Grill 6–7 minutes per side until cooked through.
  4. Mix mango, cabbage, bell pepper, and cilantro in a bowl.
  5. Whisk mayonnaise, honey, lime juice, salt, and pepper.
  6. Toss slaw with dressing.
  7. Slice chicken and serve over slaw.
  8. Drizzle with extra dressing if desired.

Notes

  • Add extra jerk seasoning for more spice.
  • Can be served warm or cold.
