A quick and delicious one-pan meal featuring chicken, mushrooms, and zucchini cooked in Italian herbs.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 medium zucchinis, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, oregano, and basil.
  2. Place the chicken in the skillet and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove and set aside.
  3. Using the same skillet, add onion and garlic and sauté for 2-3 minutes until translucent.
  4. Add mushrooms and zucchini, cooking for 5-7 minutes until tender.
  5. Return chicken to skillet, pour in chicken broth, and simmer for 5 minutes to blend flavors.
  6. Sprinkle Parmesan cheese over top and let melt slightly.
  7. Garnish with fresh parsley before serving.

Notes

  • Serve with rice, pasta, or crusty bread.
  • Add spinach or bell peppers for extra vegetables.
