This Simple Instant Pot Honey Mustard Chicken is a quick and flavorful weeknight dinner made with tender chicken pieces coated in a sweet and tangy honey Dijon sauce. Pressure cooked for maximum juiciness, then finished with a glossy thickened glaze, it’s perfect served over rice, potatoes, or vegetables.

  • olive oil spray
  • 3/4 cup chicken stock
  • 3 tbsp honey
  • 2 1/2 tbsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 1/2 tbsp cornstarch (dissolved in 2 tbsp water)
  • 1/2 tsp apple cider vinegar
  • salt to taste
  • 1/4 tsp cracked black pepper
  • 2 tbsp fresh chopped parsley

Instructions

  1. Pat chicken breasts dry and cut into bite-sized pieces.
  2. Mix smoked paprika, garlic powder, salt, and pepper in a bowl, then coat chicken evenly.
  3. Whisk honey, Dijon mustard, apple cider vinegar, and chicken stock in a separate bowl.
  4. Dissolve cornstarch in water and set aside.
  5. Set Instant Pot to sauté mode and lightly coat with olive oil spray.
  6. Brown chicken in batches for 3–4 minutes until golden.
  7. Return all chicken to the pot and pour in honey mustard sauce, scraping up browned bits.
  8. Seal lid and cook on high pressure for 0 minutes.
  9. Let natural release for 10 minutes, then quick release remaining pressure.
  10. Remove chicken with a slotted spoon and set aside.
  11. Switch to sauté mode and simmer sauce.
  12. Whisk in cornstarch slurry and cook until thickened.
  13. Return chicken to pot and gently coat in sauce.
  14. Adjust seasoning if needed and stir in fresh parsley before serving.
