Honey BBQ Chicken & Loaded Cheesy Rice Bowl is the ultimate comfort food packed with smoky, sticky BBQ chicken layered over creamy, gooey three-cheese rice.   • 1 ½ lbs boneless, skinless chicken breasts, sliced into strips
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ¾ cup BBQ sauce
  • ¼ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 6 tbsp unsalted butter, divided
  • 8 garlic cloves, minced
  • 1 cup corn kernels
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded Monterey Jack cheese
  • 4 oz cream cheese, softened
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 2 green onions, sliced

Instructions

  1. In a saucepan, melt 2 tbsp butter and sauté half the garlic for 1 minute.
  2. Add rice and toast for 2 minutes.
  3. Pour in chicken broth, bring to a boil, then reduce heat. Cover and simmer for 18 minutes.
  4. Stir in cream cheese, corn, and cheddar until melted and stretching.
  5. Stir in mozzarella and Monterey Jack until gooey and glossy.
  6. Season chicken strips with smoked paprika, garlic powder, and salt.
  7. Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden with dark seared edges.
  8. In a small bowl, whisk BBQ sauce, brown sugar, vinegar, and Worcestershire sauce.
  9. Pour sauce over chicken and simmer for 3 minutes until sticky and glossy.
  10. Add remaining 2 tbsp butter and remaining garlic to the BBQ chicken, tossing until smoky and coated.
  11. Plate cheesy rice and pile heavily with sticky honey BBQ chicken.
  12. Garnish with parsley and green onions.
