These S’mores Cookie Bars combine the classic flavors of s’mores in a delicious, chewy cookie bar form, perfect for sharing with family and friends.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • Extra chocolate chips and marshmallows for topping, as desired

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually add dry mixture to butter mixture, mixing until just combined. Do not overmix.
  6. Fold in graham cracker crumbs and chocolate chips until evenly distributed.
  7. Spread half of cookie dough into prepared pan, pressing down evenly.
  8. Sprinkle mini marshmallows over cookie layer, then top with remaining dough. Spread gently to cover marshmallows.
  9. Top with extra chocolate chips and mini marshmallows.
  10. Bake for 25–30 minutes until golden brown and a toothpick inserted comes out clean.
  11. Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing into squares.

Notes

  • For a variation, try adding chopped nuts or using different types of chocolate for added flavor.
