This Herb Chicken and Potatoes Slow Cooker is a comforting, flavor packed meal that comes together effortlessly in one pot.

  • 4 boneless skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Pat chicken breasts dry and season generously with salt and black pepper.
  2. In a large bowl, toss halved baby potatoes with olive oil, thyme, and rosemary until evenly coated.
  3. Place the seasoned potatoes at the bottom of the slow cooker.
  4. Scatter chopped onion and minced garlic over the potatoes.
  5. Lay the seasoned chicken breasts on top of the potato layer.
  6. Pour chicken broth evenly over everything in the slow cooker.
  7. Sprinkle additional thyme and rosemary over the chicken.
  8. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is tender and fully cooked.

Notes

  • Add carrots or green beans during the last 2 hours of cooking for extra vegetables.
  • Squeeze fresh lemon juice over the dish before serving to brighten the flavors.
