  • 1 1/2 lbs thin-sliced boneless skinless chicken breasts
  • 8 oz mango-pineapple salsa
  • 1/3 cup lime juice
  • 1/4 cup olive oil
  • 1/2 tsp black pepper
  • 1 large yellow bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz mango-pineapple salsa (for garnish)
  • 1/2 cup diced mango
  • 1/3 cup pineapple tidbits
  • 24 tbsp fresh cilantro (optional)

Instructions

  1. Combine chicken, salsa, lime juice, olive oil, and black pepper in a zip-top bag and marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat and lightly oil grates.
  3. Toss bell peppers with olive oil, salt, and pepper and place in a grill basket.
  4. Grill chicken 4–5 minutes per side until fully cooked.
  5. Stir peppers occasionally until tender-crisp.
  6. Transfer chicken to a serving plate.
  7. Top with extra salsa, mango, pineapple, and cilantro.
  8. Serve immediately while warm.
