2 tbsp unsalted butter
1 tbsp olive oil
2 tsp minced garlic
1 ¾ cups whole white mushrooms, washed and dried
¼ cup cream cheese, cut into small cubes
½ cup Parmesan cheese
½ cup heavy cream
1 tbsp Italian seasoning
½ tsp dry oregano
½ tsp salt
½ tsp ground black pepper
½ tbsp fresh chopped parsley
Instructions
In a large 12-inch frying pan, cook butter, olive oil, garlic, and mushrooms over medium-high heat until mushrooms are tender, about 5 minutes.
Reduce heat to medium and add cream cheese, cooking until melted.
Lower heat to medium-low, then add Parmesan, heavy cream, Italian seasoning, oregano, salt, and pepper. Simmer for 5 minutes, stirring often.
Remove from heat and sprinkle with parsley before serving.
Notes
For extra flavor, add a splash of white wine while cooking the mushrooms.
Serve as a side with chicken, steak, or pasta.
Optional: top with extra Parmesan before serving for a cheesy finish.
