4 boneless, skinless chicken breasts
3 tablespoon olive oil, divided
4 cloves garlic, minced or grated
1 teaspoon dried thyme
1 teaspoon dried Italian herbs (optional)
1 teaspoon salt
1/2 teaspoon black pepper
4 large russet potatoes, peeled and chopped
4 tablespoon butter
1/2 cup warm whole milk
2 oz cream cheese (optional)
1 pound carrots, peeled and halved
1 tablespoon olive oil
Salt and pepper to taste
2 tablespoon butter
1 tablespoon honey
1 garlic clove, minced
1 shallot, minced
2 cloves garlic, minced (for sauce)
1/2 cup dry white wine
1/2 cup chicken stock
2 tablespoon cold butter
Instructions
Boil potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.
Preheat oven to 425°F. Toss carrots with olive oil, salt, and pepper. Roast 25–35 minutes.
Melt butter with honey and garlic, then toss with roasted carrots.
Season chicken with garlic, thyme, herbs, salt, pepper, and olive oil.
Sear chicken in skillet 5–6 minutes per side until cooked through (165°F). Remove and rest.
Sauté shallot and garlic in same pan. Deglaze with white wine and reduce.
Add chicken stock and simmer until slightly thickened. Whisk in cold butter.
Mash potatoes with butter, milk, and cream cheese until creamy.
Serve chicken over mashed potatoes with glazed carrots and pan sauce.
