1 (15-ounce) can black beans, drained
1 (10-ounce) can Rotel, drained
1 bell pepper, diced
1 cup shredded cheddar cheese
1 (9.25-ounce) bag Fritos
2/3 cup sour cream
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
Instructions
Whisk together sour cream, olive oil, salt, pepper, garlic powder, onion powder, and cumin in a small bowl until smooth.
In a large bowl, combine corn, black beans, Rotel, bell pepper, and cheddar cheese.
Pour dressing over the mixture and stir gently.
Just before serving, fold in Fritos to keep them crunchy.
