Ingredients

Scale
  • 3 ripe peaches, sliced thinly
  • 2 balls burrata cheese (about 4 oz each)
  • 1 cup cherry tomatoes, halved (optional)
  • 1/2 cup fresh basil leaves
  • 2 cups arugula or mixed greens (optional)
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • 1/4 teaspoon sea salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash peaches and slice into thin wedges. Halve cherry tomatoes if using. Gently tear burrata into pieces.
  2. Arrange arugula or mixed greens on a serving platter if using. Place burrata in the center or scatter across greens.
  3. Layer peach slices around or over the burrata. Add cherry tomatoes if desired.
  4. Tuck basil leaves between peaches and cheese, leaving them whole or lightly torn.
  5. Drizzle olive oil and balsamic glaze evenly over the salad.
  6. Season with sea salt and black pepper. Serve immediately for best texture and flavor.

Notes

  • Use very ripe peaches for maximum sweetness and juiciness.
  • Best served immediately as burrata is most creamy when fresh.
  • Can be served as a side dish or light main course.
