These Creamy Queso Chicken Enchiladas are a comforting, family-friendly dinner made with tender shredded chicken, creamy cheese filling, and rich queso sauce baked to perfection. Easy, satisfying, and perfect for weeknights.

  • 2 cups shredded chicken
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can chopped green chilies
  • 1 package Velveeta cheese
  • 1 can diced tomatoes with green chilies
  • 8 tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken, taco seasoning, sour cream, cheddar cheese, and green chilies.
  3. Melt Velveeta with diced tomatoes in a saucepan over medium-high heat to create queso sauce.
  4. Fill tortillas with chicken mixture and roll tightly.
  5. Place rolled enchiladas in a greased 9×13 baking dish, seam side down.
  6. Pour queso sauce evenly over enchiladas.
  7. Bake for 20–25 minutes until hot and bubbly.
  8. Serve warm.

  • Use shredded beef or turkey instead of chicken if desired.
  • Greek yogurt can replace sour cream for a lighter version.
  • Monterey Jack or Pepper Jack adds extra flavor.
