2 cups shredded chicken
1 packet taco seasoning
1 cup sour cream
1 cup shredded cheddar cheese
1 can chopped green chilies
1 package Velveeta cheese
1 can diced tomatoes with green chilies
8 tortillas
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix shredded chicken, taco seasoning, sour cream, cheddar cheese, and green chilies.
Melt Velveeta with diced tomatoes in a saucepan over medium-high heat to create queso sauce.
Fill tortillas with chicken mixture and roll tightly.
Place rolled enchiladas in a greased 9×13 baking dish, seam side down.
Pour queso sauce evenly over enchiladas.
Bake for 20–25 minutes until hot and bubbly.
Serve warm.
Notes
