This Creamy Chicken Spinach Alfredo Penne is a rich, high-protein comfort food dish made with tender chicken, fresh spinach, and penne pasta coated in a silky garlic Parmesan Alfredo sauce. Perfect for a hearty family dinner or meal prep.

  • 16 oz penne pasta
  • 2 large chicken breasts, diced
  • 2 cups fresh spinach
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 5 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 1 1/4 cups grated parmesan cheese
  • 2 tbsp chopped parsley (optional)
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Season chicken with salt, black pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet and cook chicken for 5 to 6 minutes until golden brown. Transfer to slow cooker.
  3. In the same skillet, melt butter and sauté garlic for 1 minute.
  4. Add heavy cream and milk and simmer for 3 to 4 minutes.
  5. Stir in parmesan cheese until smooth and creamy.
  6. Add spinach and cook until wilted.
  7. Pour Alfredo sauce over chicken in the slow cooker.
  8. Cook penne until al dente, then drain.
  9. Add pasta to slow cooker and toss until coated.
  10. Cover and cook on low for 1 to 2 hours until creamy and heated through.
  11. Garnish with parsley, red pepper flakes, and extra parmesan before serving.

  • Add mushrooms or broccoli for extra vegetables and texture.
  • Use half-and-half instead of heavy cream for a lighter sauce.
  • Freshly grated parmesan melts more smoothly into the sauce.
