This creamy chicken pasta soup is nutritious, easy and big on flavor. A comforting one-pot meal made with chicken, pasta, vegetables, and a rich cheesy broth, ready in under 30 minutes.

Ingredients

  • 1 lb cooked shredded chicken (or rotisserie chicken)
  • 4 cups low-sodium chicken broth
  • 2 tsp olive oil
  • 1/2 cup chopped onion
  • 1 cup diced carrots
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 tsp salt and black pepper
  • 2 cups uncooked small pasta (ditalini or similar)
  • 2 cups chopped spinach
  • 1/2 cup parmesan cheese (optional)

Instructions

  1. Sauté onion, carrots, celery, and garlic in olive oil for about 5 minutes until tender.
  2. Add cooked chicken and cook for 3 minutes.
  3. Add broth, heavy cream, and cream cheese. Cover and bring to a boil, then simmer for 15 minutes.
  4. Add pasta and cheddar cheese and cook until pasta is done.
  5. Add spinach at the end and stir until wilted.
  6. Season and serve hot with parmesan if desired.

Notes

  • Use rotisserie chicken for convenience.
  • Add more broth if soup thickens too much.
