Creamy Chicken Lasagna made with layers of pasta, tender chicken, spinach béchamel sauce, and ricotta cheese filling baked until golden and bubbly.

  • 9 lasagna noodles
  • 4 cups shredded chicken
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 tbsp butter
  • 1/3 cup flour
  • 2 1/2 cups chicken broth
  • 1 1/2 cups half and half
  • 5 oz spinach
  • 3 cloves garlic
  • 15 oz ricotta
  • 1 egg
  • 1/4 cup parsley
  • 1/4 cup parmesan
  • 3 cups mozzarella cheese

Instructions

  1. Cook noodles and prepare chicken.
  2. Make spinach béchamel sauce by cooking onion, butter, flour, broth, and cream.
  3. Add garlic and spinach.
  4. Mix ricotta, egg, mozzarella, parmesan, and parsley.
  5. Layer noodles, ricotta mixture, chicken, and spinach sauce in a baking dish.
  6. Repeat layers and top with cheese.
  7. Bake at 375°F for 45 minutes, then broil until golden.
  8. Rest before serving.

Notes

  • Let lasagna rest before slicing.
  • Use rotisserie chicken for convenience.
