8 tablespoons salted butter
1 cup finely chopped onion
1 tablespoon minced garlic
1/3 cup all-purpose flour
2 1/2 cups chicken broth
2 cups whole milk
1 cup heavy cream
3 1/2 cups broccoli florets
3 1/2 cups shredded cheddar cheese
1/2 cup shredded parmesan cheese
1 1/2 teaspoons salt
1 teaspoon black pepper
Instructions
Melt butter in a large stockpot over medium-high heat.
Add onion and cook for 4–5 minutes until softened, stirring frequently.
Add garlic and cook for 1 minute.
Stir in flour and cook for another minute to form a roux.
Slowly whisk in chicken broth, milk, and cream until smooth.
Reduce heat and let mixture thicken slightly.
Add broccoli and cook for 10–12 minutes until tender.
Remove from heat and stir in cheddar and parmesan until melted and smooth.
Notes
For a smoother texture, blend part or all of the soup.
Keep stirring to prevent burning, especially after adding garlic and flour.
