5.2 oz Garlic & Fine Herbs Boursin cheese
4 tbsp unsalted butter, softened
1/2 cup whole milk, warmed
1/4 cup sour cream (optional)
1 1/2 tsp salt, plus more to taste
1/2 tsp black pepper, freshly ground
2 tbsp chives or parsley, chopped (for garnish)
Instructions
Peel and cut potatoes into even 2-inch chunks.
Place in a pot with cold water and 1 tsp salt. Bring to a boil, then simmer 15-20 minutes until fork-tender.
Drain and steam dry for 2-3 minutes.
Mash potatoes until smooth, leaving a few lumps if desired.
Stir in butter until melted.
Add Boursin cheese and warm milk, mixing gently.
Fold in sour cream if using. Season with pepper and additional salt.
