  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 5.2 oz Garlic & Fine Herbs Boursin cheese
  • 4 tbsp unsalted butter, softened
  • 1/2 cup whole milk, warmed
  • 1/4 cup sour cream (optional)
  • 1 1/2 tsp salt, plus more to taste
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp chives or parsley, chopped (for garnish)

Instructions

  1. Peel and cut potatoes into even 2-inch chunks.
  2. Place in a pot with cold water and 1 tsp salt. Bring to a boil, then simmer 15-20 minutes until fork-tender.
  3. Drain and steam dry for 2-3 minutes.
  4. Mash potatoes until smooth, leaving a few lumps if desired.
  5. Stir in butter until melted.
  6. Add Boursin cheese and warm milk, mixing gently.
  7. Fold in sour cream if using. Season with pepper and additional salt.
  8. Adjust milk or Boursin for texture and flavor. Transfer to serving bowl and garnish.
