4 bone-in chicken thighs (about 2 lbs)
1/4 cup honey
2 tbsp chipotle chili powder
1 tbsp olive oil
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 lbs russet potatoes, peeled and cut into chunks
1 cup milk
4 oz smoked gouda cheese, shredded
4 tbsp unsalted butter
Salt and pepper, to taste
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, mix honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Coat chicken thighs in marinade and let sit at least 15 minutes (or refrigerate overnight for more flavor).
Place potatoes in a large pot, cover with water and a pinch of salt, boil until fork-tender (15-20 minutes), then drain.
Mash potatoes with milk, butter, and smoked gouda until smooth. Season with salt and pepper. Keep warm.
Place marinated chicken in a baking dish or oven-safe skillet, skin-side up, and bake 25-30 minutes until internal temperature reaches 165°F (75°C) and skin is crispy.
Serve chicken alongside mashed potatoes, drizzling any pan juices over chicken.
