A quick and easy Mediterranean-inspired salad made with chickpeas, avocado, feta, fresh herbs, and a zesty lemon dressing.

Ingredients

  • 1 (15-ounce/425g) can chickpeas, drained and rinsed
  • 1 avocado, pitted and diced
  • 4 ounces/115g feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, avocado, feta, red onion, parsley, and mint.
  2. In a small bowl or jar, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Pour dressing over salad and toss gently until evenly coated.
  4. Serve immediately or chill before serving.

Notes

  • Toss avocado with lemon juice to prevent browning.
  • Use dried herbs at half the quantity if fresh are unavailable.
  • Best served fresh but can be chilled briefly.
