This Chicken Zucchini Stir Fry is a quick, healthy, and flavorful weeknight meal made with tender chicken thighs, fresh zucchini, garlic, and a savory Asian-style sauce. It’s high in protein, packed with nutrients, and perfect served over rice, noodles, or in lettuce wraps for a light but satisfying dinner.

Ingredients

  • 1 lb boneless chicken thighs
  • 1 medium zucchini
  • 3 cloves garlic
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce
  • Ground black pepper (optional)

Instructions

  1. Cut chicken into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar (or honey), and rice vinegar for at least 30 minutes.
  2. Heat oil in a wok over medium-high heat and sauté smashed garlic until fragrant.
  3. Add marinated chicken and cook for about 2 minutes until lightly browned.
  4. Remove chicken from the pan and set aside.
  5. Add sliced zucchini and stir-fry for about 5 minutes until tender but still slightly crisp.
  6. Return chicken to the pan and add oyster sauce and black pepper if using.
  7. Stir-fry everything together for another 2–3 minutes until fully cooked and coated in sauce.
  8. Serve hot over rice, noodles, or in lettuce wraps.

Notes

  • Do not overcook zucchini to maintain texture and freshness.
  • Chicken thighs give better juiciness, but chicken breast can also be used.
  • Adjust sweetness and saltiness by modifying sugar and soy sauce.
  • Add chili flakes for extra heat if desired.
