Chicken Zucchini Bake is a creamy, cheesy one-dish meal made with tender chicken, fresh zucchini, tomatoes, and Italian herbs. Baked until golden and bubbly, it’s a simple, healthy, and comforting dinner perfect for any night of the week.

Ingredients

  • 2 cups cooked chicken, shredded
  • 3 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix chicken, zucchini, tomatoes, mozzarella, cream cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.
  3. Lightly grease a 9×13 baking dish with olive oil.
  4. Spread mixture evenly into the dish.
  5. Top with Parmesan cheese.
  6. Bake 25–30 minutes until zucchini is tender and cheese is golden and bubbly.
  7. Let rest slightly before serving and garnish with basil if desired.

Notes

  • Stores well in the fridge for up to 3 days.
  • Add red pepper flakes for heat.
