Creamy Chicken Hashbrown Casserole is a comforting baked dish made with chicken, hash browns, vegetables, and a rich creamy sauce, topped with buttery crackers and melted cheese.

  • 3 cups frozen hash browns, thawed slightly (about 8 oz)
  • 23 cups cooked chicken, diced
  • 1/4 cup bacon bits
  • 1 cup shredded cheddar cheese
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1/2 cup milk
  • 12 oz frozen mixed vegetables, thawed slightly
  • 1/8 teaspoon dried thyme
  • Topping:
  • 1214 Ritz crackers, crushed
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix hash browns, chicken, bacon bits, 1 cup cheddar, vegetables, cream of chicken soup, milk, and thyme in a large bowl.
  3. Spread mixture evenly into a greased 7×11-inch baking dish.
  4. Combine crushed Ritz crackers with 1/2 cup cheddar cheese and sprinkle over casserole.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake for another 15 minutes until golden and bubbly.
  7. Let rest 10–15 minutes before serving.

Notes

  • Ensure hash browns are slightly thawed for even cooking.
  • You can substitute turkey or omit bacon if preferred.
  • Add extra cheese for a richer flavor.
