2 cups long-grain white or brown rice
2 cups chicken broth
1.5 lbs chicken breast or thighs, diced
1 tbsp olive oil
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 packet fajita seasoning
1 cup shredded cheddar or Mexican cheese blend
1/2 cup black beans (optional)
1/2 cup corn (optional)
1/2 cup diced tomatoes (optional)
Instructions
Cook sliced onions and bell peppers in a skillet until softened, then set aside.
Season chicken with fajita seasoning and sear until browned, then cut into bite-sized pieces.
Preheat oven to 375°F (190°C).
Spread uncooked rice in a greased 9×13 baking dish.
Add chicken broth, cooked chicken, and sautéed vegetables. Stir to combine.
Cover with foil and bake for 35–40 minutes until rice is tender and chicken is cooked through.
Remove foil, top with shredded cheese, and bake another 5–10 minutes until melted and bubbly.
Serve warm.
