Fajita Seasoning
2 tsp smoked paprika
2 tsp ground cumin
2 tsp dried oregano
1 tsp fajita seasoning
1 tsp chili powder
1 tsp garlic powder
1/2 tsp red pepper flakes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
Casserole Ingredients
1.5 lbs chicken breast, cubed or sliced
Salt and pepper, to taste
2 tbsp lime juice
1 tbsp vegetable oil
4 tbsp butter
1/2 can black refried beans (optional)
1 large onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 jalapeño pepper (optional), chopped
1/2 cup sour cream (optional)
2 cups shredded Mexican cheese blend
Optional sides: tortillas, rice, tomatoes
Instructions
Season chicken with salt and pepper.
Mix fajita seasoning in a bowl and set aside.
Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.
Layer chicken in dish, add lime juice, oil, half seasoning, and half butter. Toss to coat.
Optional: add refried beans.
Add peppers and onions, then remaining seasoning and butter.
Top with sour cream (optional) and cheese.
Cover with foil and bake 30 minutes.
Uncover and bake 10–15 minutes more until slightly browned and reduced.
Serve warm with tortillas or rice if desired.
Notes
Chicken can be swapped with skirt steak or mixed meats.
Great served with tortillas, rice, or on its own.
Adjust spice level by reducing chili powder or jalapeño.
