This Easy Chicken Burrito Casserole is a hearty, protein-packed one-pan dinner that tastes like a classic burrito in casserole form. It’s simple, filling, and perfect for family meals.

  • 1/2 cup finely diced onion
  • 1 red bell pepper, diced
  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 cup frozen corn kernels
  • 1 (14 oz) can low sodium black beans, drained and rinsed
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 (4 oz) can mild green chilies
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 1/4 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a 9×13 inch baking dish, mix onion, bell pepper, uncooked rice, fajita seasoning, and cayenne pepper.
  3. In a separate bowl, whisk chicken broth, green chilies, tomato paste, and olive oil.
  4. Pour liquid mixture into baking dish and stir well.
  5. Add chicken, black beans, and corn; mix to combine.
  6. Cover with foil and bake for 65–70 minutes until liquid is absorbed.
  7. Remove foil, top with cheese, and bake another 5–10 minutes until melted and slightly golden.
  8. Rest 5–10 minutes before serving.

Notes

  • Cooking time may vary depending on rice type and oven.
  • Stir if needed during cooking if liquid remains.
  • Rotisserie chicken can be used as a shortcut.
  • Letting it rest helps final texture.
