These Cheesy Zucchini Breadsticks are a low-carb, veggie-packed twist on a classic favorite! Golden, cheesy, and crisp, perfect for appetizers, snacks, or sides. Serve with marinara or ranch for dipping.

  • 2 medium zucchinis (about 2 cups shredded)
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese for topping
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Shred zucchini and squeeze out excess liquid using a towel or cheesecloth.
  3. In a large bowl, mix zucchini, eggs, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper until well combined.
  4. Spread mixture on the baking sheet into a thin rectangle and bake 20–25 minutes until golden and firm.
  5. Remove from oven, sprinkle 1 cup mozzarella on top, and return to oven 5–7 minutes until melted and bubbly.
  6. Let cool slightly, slice into breadsticks, garnish if desired, and serve with dipping sauce.
