Caramel Cheesecake Cookies are a delightful treat that combines the rich flavors of cheesecake and caramel in a soft, chewy cookie.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup graham cracker crumbs
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg yolk (optional)
  • 1/2 cup caramel sauce
  • Pinch of sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk flour, baking soda, salt, cinnamon, and graham cracker crumbs.
  3. Cream butter, brown sugar, and granulated sugar until fluffy.
  4. Add egg and vanilla, mix well.
  5. Combine wet and dry ingredients until dough forms.
  6. Mix cream cheese, sugar, and vanilla until smooth.
  7. Scoop cookie dough, flatten slightly, and create indent in center.
  8. Add cheesecake filling into each indent.
  9. Bake 10–12 minutes until edges are golden.
  10. Cool, then drizzle with caramel and optional sea salt.

Notes

  • Use room temperature butter and cream cheese.
  • Do not overbake for soft cookies.
  • Store in airtight container.
